Easy PB2 Cookies


Serving: 10 Prepping Time: 5 minutes Cooking Time: 8 minutes

 

INGREDIENTS


  • 1 cup oat flour or blended up Cheerios

  • 1 cup powdered peanut butter

  • ¼ tsp salt

  • ½ tsp cinnamon

  • 1 tsp baking soda

  • 1 tsp vanilla

  • ½ cup coconut oil, softened

  • 2 eggs

  • ¼ cup maple syrup (you can use up to 1/3, 1/2 cup for a sweeter cookie)


DIRECTIONS:

  1. Preheat oven to 350 degrees.

  2. Mix dry ingredients (oat flour through baking soda). Mix wet ingredients, and add to dry ingredients.

  3. Using a cookie scooper, form into small cookie shape and put on parchment paper or silpat mat.

  4. Flatten as needed.

  5. Bake for 8-10 minutes.
