Cottage Cheese Jalapeno Poppers

INGREDIENTS
6 jalapeno peppers
1/2 Cup cottage Cheese
2 tablespoons cream cheese
1/4 cup cheddar cheese shredded
1/4 teaspoon garlic powder
1/4 cup panko breadcrumbs, divided
DIRECTIONS:
Preheat the oven to 425°F
Cut jalapenos lengthwise and remove the seeds and ribs from each pepper.
In a medium bowl, cottage cheese, cheddar, garlic powder, and 2 tablespoons of panko breadcrumbs. Stir until well combined.
Fill jalapeno halves with cottage cheese filling. Sprinkle remaining panko breadcrumbs on top.
Arrange the stuffed jalapenos in a single layer on a baking sheet lined with parchment paper. Bake for about 13-15 minutes until golden on top.
